Carrot Apple Salad
6-10 carrots, grated or minced in food processor (aim for 3-4 cups)
1-2 apples, chopped small (or chop 1 apple and grate/mince 1 apple with carrots)
1 cup yogurt (plain, vanilla, even cups of flavored if that's all you have on hand)
1 cup cottage cheese
1/2-3/4 cup raisins
1/4-3/4 cup chopped nuts (pecan, walnut, even almond)
1/4 cup flax seed
1/8-1/4 cup honey
Stir together and adjust to taste! It is best eaten fresh, but it is edible in the fridge for several days. This makes a big batch of at least 4 cups.
This is a forgiving recipe, and really, it never tastes quite the same way twice. I just throw in whatever looks good, in whatever amounts I feel like. I almost never have it on hand, but pineapple goes well in this, too.
