
Tuna Pasta Salad - Hearty Style
8.5 oz. pasta
15 oz. tuna, drained and flaked (3 small cans)
1 lg. carrot, grated or shredded
1/4 cup onion, chopped small
1/2 cup mayonnaise
1 Tbls + 1 tsp lemon juice
1 Tbls yellow mustard
2 tsp (heaping) dried dill weed (2-2 1/2 Tbls fresh dill)
1/2 tsp salt
1/4 tsp (scant) ground black pepper
Boil pasta until desired tenderness, drain, and let cool. Grate carrot into a medium mixing bowl. Add everything but tuna and pasta and mix together. Then flake the tuna into the mixture, add the cooled pasta, and mix until well combined. Keep refrigerated.
Tip: if you're in a hurry to cool the pasta, you can rinse it in cool water.
I like to add extra tuna - thus making a "hearty" tuna pasta salad - because we often eat this as our main dish. I buy tuna cans in bulk, so it is no hardship for me to add so much, but if you feel that it too much for you or that you wish a lighter side-dish type salad, back it off by a can and add only two (10 oz.) to your pasta. :)
