Peanut Butter Pie


Peanut Butter Luster Pie




15oz. Pillsbury All Ready Pie Crust

Chocolate Layer:
1/2 cup semisweet chocolate chips
1 Tbsp butter 
2-3 Tbsp water
1/4 cup powdered sugar

Filling:
1 cup butter
1 cup packed brown sugar
1 cup peanut butter
12oz. whipped topping

Topping:
1/2 cup semisweet chocolate chips
1 Tbsp butter
2-3 tsp. milk
1 1/2 tsp. corn syrup 
Whipped topping
Peanuts or chocolate shavings

Heat oven to 450 degrees. Bake at 450 for 9-11 minutes or until golden. [Or prepare pie crust according to package directions.] Cool completely.

In saucepan on low heat, melt 1/2 cup chocoalte chips and 1 tsp butter with 2 tsps water, stirring until smooth. Blend in powdered sugar until smooth. Spread mixture in pie crust.

In saucepan, mix 1 cup butter and brown sugar. Cook over medium heat until butter is melted and mixture is smooth, stirring frequently. Refrigerate for 10 minutes. In large bowl, beat peanut butter and brown sugar mixture at low speed. Then beat for 1 minute at medium-high speed. Add 12oz. whipped topping, beat for 1 minute at low speed. Pour over chocolate and refrigerate. 

In small saucepan over low heat, melt chocolate chips, butter, milk, and corn syrup. stirring until mixture is smooth. Spoon over filling. Refrigerate for at least 2 hours. 


[Note: I did not put the chocolate topping on the pie pictured - it tastes just fine without, but does make for a very impressive pie.]
